PASAR is a neighbourhood restaurant built around fire, honest ingredients, and the soul of Peruvian cooking.

We believe the best meals are unhurried — shared plates passed between friends, evenings that stretch a little longer than planned. Relaxed in spirit, serious about quality.

Chef Jorge Valderrama grew up between Chile and Peru, where food was never just sustenance — it was identity.

His path took him through the kitchens of Lima, Santiago, Sydney, New Zealand, and Singapore, each city sharpening his instincts and broadening his palate. He arrived in Bali drawn by something harder to name: the rhythm of a life where great food, open water, and nature exist side by side. At PASAR, he cooks the way he lives — with care, without pretension, and always with the guest at the centre.

Found along Jalan Pungutan in the heart of Sanur, Pasar was designed to feel like a place you stumble upon and never want to leave. A small, intimate room — warm light, open kitchen, and just enough seats to keep it personal. The building was conceived as an extension of the food: unpretentious, considered, and rooted in warmth.
